Ingredients: Roasted eggplant, onion, tomato, green chilli, ginger, and garam masala.
Method: Roast eggplant over an open flame. Mash pulp. Sauté onions and tomatoes with spices in mustard oil. Add eggplant and cook until smoky and rich.
Kaddu Ki Sabzi (Sweet-Spiced Pumpkin)

Ingredients: Pumpkin cubes, mustard oil, cumin, fennel powder, dry mango powder, and jaggery.
Method: Temper cumin in mustard oil. Add pumpkin and spices. Cook until soft. Slight sweetness balances spices beautifully.
Dal Makhani

Ingredients: Whole black urad dal, rajma, butter, cream, tomatoes, ginger-garlic paste, garam masala.
Method: Soak and cook urad and rajma until soft. Simmer with tomato base, butter, and cream for at least 30–40 minutes. Finish with kasuri methi. Traditionally, they are cooked overnight on coal, giving them a depth only found in the dhaba style preparation in Punjab.
Regional Roti & Jeera Rice

- Whole wheat dough rolled and cooked in a tandoor or on an open flame. Slightly charred, soft, and perfect for scooping dals.

Ingredients: Rice, milk, sugar, cardamom, nuts.
