While it can't be easy to prepare a whole meal box for adults on busy days, making them for the little picky eaters is a task. Because kids are natural food critics. Ingredients:

  • 1 bottle gourd (thinly sliced rounds)
  • Olive oil (as needed)
  • Chickpea flour
  • Semolina 
  • Spices: salt, turmeric, funnel seed powder, coriander powder, chaat masala, chilli powder (optional)

Method: 

  • Peel and slice lauki, the bottle gourd in circular, thin slices and soak in salted water.
  • Prepare the coating mixture with chickpea flour, semolina and spices according to your choice, or use the one mentioned above. I like to use the classic achari masala mix I prepare at home. If you want to know more about the homemade spice mix, do read the blog on it. 
  • Now pat dry with a cloth or remove aside in a dry plate and generously apply the coating mixture.
  • If you are baking, arrange the coated chips on a tray, and bake at 180°C for 20–25 mins, flipping once. You can even shallow fry them or air fry them according to your preference. To make them healthier, Air-frying and baking are best.
  • Pack Along: 
    • To make a perfect meal for kids' lunch box, pack along with a serving of rice and sambar or dal, and these chips as a side. 
    • Or you can roll it with chapati like frankie, or sandwich it, along with mint yogurht spread, and some veggies like cucumber, lettuce, carrots, beetroot, making it more interesting. 

Veggie Cutlets

Looks like a snack, but is secretly full of vegetables, serve it with instant ketchup or make your own homemade dips, it would be an instant hit.

Ingredients: 

  • 2 boiled potatoes
  • Veggies: ½ cup grated carrot, ¼ cup peas, ¼ cup finely chopped beans, ¼ Broccoli 
  • 2 tbsp breadcrumbs/semolina
  • Salt, pepper
  • ½ tsp garam masala
  • Fresh Cheese cubes (optional)

Method:

  • Boil potatoes until they are properly mashable, prepare the veggies, par-boil peas, beans and broccoli and chop them finely, or just make them fine with a grinder or chopper. 
  • Mash everything together, along with spices. I generally keep this simple with no chillies, some Italian herbs, pepper and salt.
  • Now shape into patties as per how you are serving, either round or long cylindrical, and coat them with either breadcrumbs or semolina. This is optional to add cheese between the patty to make it more interesting. 
  • Shallow fry or air fry till golden.
  • Pack Along: 
    • To make a full meal idea for kids' lunch box, you can make a burger or sandwich with healthy breads like wheat or ragi breads and a bun, with homemade dips, lettuce, onion, tomatoes, and cucumber. 
    • Or make it shawarma, frankie style, if you make them cylindrical, pair with hummus and make it healthier.
    • I personally like to make a salad of this, but cut the cutlets into cubes, mix it with light sprouts, cucumber, and some leafy greens with dressing of your choice and add some feta cheese.

Green Pockets With Stir-Fry Veggies

Ingredients:

  • Veggies for Pockets: 1 cup green peas, broccoli, spinach
  • Veggies for Stir-fry: French Beans, potato wedges, carrots, chopped garlic
  • 1 tbsp butter
  • Salt, pepper
  • Grated cheese
  • Soy sauce and honey
  • Bread slices or pastry sheets

Method:

  • Par-boil broccoli, spinach and peas, mash them and cook in butter, and season with salt and pepper.
  • Place filling, add grated cheese inside the bread pocket and seal them diagonally so they look square. Or take two sheets of pastry or bread on the base, place the filling and cover with another sheet of pastry or bread and enclose them in circular or square shapes.
  • Place them on a tray, toast or bake until crispy.
  • To make the stir-fry veggies, cut the french bean in two, keep them long, now cut boiled potatoes into wedges and carrots also into wedges. 
  • In a wok, take olive oil, add finely chopped garlic and onions, and add in all the veggies and stir-fry them until crispy and crunchy. Glaze it with soy sauce and a little honey to give a sweet taste. 
  • This is wholesome veggies with some carbohydrates and don't need any additions.

  • 2 capsicums (halved)
  • 1 cup cooked rice
  • Corn + carrots
  • 2 tbsp paneer crumbs
  • Cheese

Method: 

  • Cook the rice using the one you prefer, use small cube diced veggies, and paneer and mix them well in a bowl.
  • Properly wash your capsicum, cut the top, remove all the seeds from inside and clean them. Fill the capsicum halves with the mixture you have prepared.

  • ¼ cup thinly sliced cabbage
  • 1 tsp garlic

  • Little cornflour slurry

  • Prepare all your veggies as necessary, then take a wok or skillet and sauté garlic and onions
