When you talk of Lasagna, it's one of the Classic Italian recipes, the pasta with a twist, layers into levels of richness and depth of aroma. Let's have a step-by-step guide on how to make authentic lasagna at home. 

Note: this recipe is for 2-3 serves. Increase the ingredient quantity for more servings. 

  • Ingredients (Serves: 2–3)

    • For the Meat Sauce (Ragù):

      • Olive oil – 2 tbsp

      • Butter – 1 tbsp

      • Onion – 1 (finely chopped)

      • Garlic – 3 cloves (minced)

      • Ground beef or chicken – 250 g (For vegan version, use Soya chunk or tofu)

      • Crushed tomatoes – 400 g (or tomato puree)

      • Tomato paste – 2 tbsp

      • Red chili flakes – ½ tsp (optional)

      • Italian seasoning – 1 tsp

      • Basil – handful (fresh or dried)

      • Salt – to taste

      • Black pepper – ½ tsp

      • Red wine – ¼ cup (optional but perfect for date-night depth)

    • For the Béchamel (White Sauce):

      • Butter – 2 tbsp

      • All-purpose flour – 2 tbsp

      • Milk – 2 cups (warm)

      • Nutmeg – a pinch

      • Salt – to taste

      • Parmesan cheese – 2 tbsp (optional for richness)

    • For the Layers:

      • Lasagna sheets – 6–8 (boiled as per packet instructions)

      • Mozzarella cheese – 1 cup (grated)

      • Cheddar cheese – ½ cup (grated)

      • Fresh basil leaves – a few for garnish

  • Method: 

    • To make the Authentic Italian Lasagna Ragù, the Meat Sauce is prepared, but you can have a vegan substitute. Heat olive oil and butter in a pan. Add onions and garlic; sauté till golden and aromatic. Add the minced meat. If making a vegan version, add the boiled and drained soya granula or crushed tofu; cook until browned and slightly crisp. Pour in tomato puree, paste, red wine, herbs, salt, and pepper. Let it simmer for 15–20 minutes until thick and luscious. Taste and adjust seasoning; it should be rich, tangy, and slightly smoky. Add a teaspoon of sugar if the sauce tastes too acidic.

    • Prepare the Béchamel Sauce. In a saucepan, melt butter. Add flour and whisk for a minute until it turns pale golden. Gradually pour in warm milk, stirring continuously to avoid lumps. Add salt, nutmeg, and parmesan. Stir until thick and creamy. If you are making the vegan version, use coconut or almond milk and olive oil to substitute the dairy product.

    • Layer the lasagna. Grease a baking dish with butter or olive oil. Add a layer of béchamel sauce first. Place lasagna sheets, overlapping slightly. Spread the ragù evenly, then drizzle béchamel on top. Sprinkle mozzarella and cheddar for the vegan version; use vegan cheese available in the market easily. Repeat layers until you reach the top, finishing with cheese.

    • Bake to Golden Perfection Preheat oven to 180°C (350°F). Bake for 25–30 minutes until bubbling and golden brown on top. Let it rest for 10 minutes before serving.

    • You can pair this with a glass of red wine (Merlot or Shiraz pairs beautifully), A side of garlic bread or roasted veggies, Candles, soft music, and dim lights to set the mood.
