Exploring food around the globe always hits differently, but what truly lingers is discovering traditional recipes right where they belong. There’s something deeply special about tasting authentic flavours in their own soil, where every spice, every aroma, and every technique carries a history and generations of stories. And when it comes to soulful, heritage-rich cuisine, Kolkata stands in a league of its own. Apart from the Kolkata Knight Riders playing the pitch, the state is known for a culinary spread that entices many, and I am not an exception. So let's explore Kolkata cuisine and its essence through this blog.
My visit to Kolkata was everything comfortable and tasteful, starting with my Air India flight experience, their tickets were easy to book, and on the same website, they have a hotel booking option, some having deals through membership, so I enjoyed some perks. They provide on-flight meals of our choice, giving varied options like vegetarian, non-vegetarian, and dietary preferences included. And in-state transit was sorted as they even have cab booking options to pick up from the airport to my destination, just elevating my travel experience and putting me in an awesome mood to rummage through tasty street food and exquisite culinary locations, and exploring the cultural and heritage sites of Kolkata.

My aim in planning this trip was to explore the authentic Kolkata’s famous sweet places. Back in my state, Kolkata sweets are available, yet when tasted in the place, it acquires a layer of authenticity and flavour that will linger with you forever. When we talk about Kolkata’s food culture, it is rooted in Bengali cuisine, known for its delicate balance of flavours rather than overpowering spice. Unlike many Indian cuisines that lean heavily on heat, Bengali food is about subtle layering; sweet, salty, bitter, and mildly spicy all coexist beautifully.
Key Kolkata Spices and Ingredients:
- Mustard oil: the backbone of most dishes, adding a sharp, pungent depth
- Panch phoron: a classic five-spice blend that enhances the taste (fenugreek, nigella, cumin, mustard, fennel)
- Fresh fish: especially river fish like rohu and hilsa
- Rice: the staple that completes every meal
- Green chilies & turmeric: for gentle heat and color

The Unique Essence Of Kolkata Cuisine & My Experience:
What sets this cuisine apart is its refined simplicity. There’s an emotional connection to food, recipes passed down through generations, often cooked with patience and intuition rather than strict measurements. They believe in sustainable living with flavourful indulgence, which sounds contrary but interesting.

I remember one morning, while leaving for our first destination, stopping at a tea stall and asking for a paper or plastic cup, and the owner, who was aged, got angry. He got agitated that we youngsters don't value nature and healthy safety, and served me in the mud cups called Kullad. After that, every stall I went to, it was either a leaf plate for food and a Kullad or a glass cup for tea.

From Kolkata Puchka to Mistidoi, all the dishes I tried were flavourful indulgences. Not to forget the Machar jhol, classic Kolkata Biryani, Aalo posto, street-style kathi roll, and Kolkata Special Kalika Mukhorochok Telebhaja, where you get egg chop, fish fry, and others. Each food was an experience we enjoyed, and one thing I learned from this food trail was the Hilsa fish curry served to me when we had dinner at a friend's place. This was a fish curry, with the fish having a natural buttery texture, paired with bold mustard flavor. Let me share the same with you.
Traditional Dish Spotlight: Shorshe Ilish Recipe (Hilsa in Mustard Gravy)
I was told that Shorshe Ilish is one of the most iconic dishes of Bengal, closely tied to both culture and geography. This fish, often called the “queen of fish,” thrives in the rivers of eastern India and Bangladesh. Historically, this dish has been a part of festive meals, especially during the monsoon season when hilsa is at its freshest. The dish doesn’t rely on heavy spices or complex techniques. Instead, it celebrates minimalism, just a few ingredients coming together to create something deeply aromatic and unforgettable. It’s not just food, it’s nostalgia on a plate.

Ingredients:
- 4 pieces of hilsa fish
- 3 tbsp mustard seeds (soaked and ground into paste)
- 2 green chilies (slit)
- ½ tsp turmeric powder
- Salt to taste
- 3 tbsp mustard oil
- ½ cup water
How to make:
- First, prepare a mustard paste. Grind soaked mustard seeds with a little water into a smooth paste. Avoid over-grinding to prevent bitterness.
- Next, marinate your fish with salt and turmeric and let it rest for 10 minutes.
- Since the dish uses mustard oil, remember to heat it until the smoking point, then slightly cool it, which reduces bitterness.
- Once your oil is ready, add mustard paste to the oil, along with turmeric and salt. Stir gently and add water to form a thin gravy.
- At this step, add the marinated fish, carefully place each piece into the gravy, and do not stir too much; hilsa is delicate.
- Let it simmer, cover, and cook on low heat for 8–10 minutes.
- For the final touch, add green chilies and drizzle a little raw mustard oil on top for extra aroma.
- Serve with steaming rice, and your Shorshe Ilish is ready.
