Crack The Ordinary Shell: 10 Recipes To Give Your Egg A Tasty Makeover

Eggs are the ultimate kitchen superheroes. iI have been a fan of egg because, after potato, this is one ingredient that could mould in many egg recipes, giving me endless possibilities of quick and easy starter recipes or dinner recipes when I am hosting. 

I have a small problem with people that egg recipes are quick, affordable, packed with protein and yet we somehow get stuck in a “same old omelette” loop. But eggs can be spicy, creamy, saucy, herby, or downright indulgent, made into premium culinary art with a little effort. So today with me, let’s crack out of boring breakfasts and turn simple eggs into flavour-packed meals you’ll actually get excited about.

Beyond Basic Eggs Recipes: Crack, Cook, and Upgrade!

Here are some delicious and best egg recipes upgrades you can make for any meal of your day, a taste upgrade you need in your life:

Egg Chilli (Indo-Chinese Style)

This is one of my favourite and best egg recipes for starters and even a main course if you tweak it a little.

Ingredients: 

  • 4 boiled eggs (halved)
  • 1 onion (cubed)
  • 1 capsicum (cubed
  • 1 tbsp garlic (chopped)
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tsp vinegar
  • 1 tsp cornflour slurry
  • Spring onions
  • Egg coating batter: cornflour slurry, salt, black pepper, red chilli powder(optional)

Method: 

  • Start by coating your egg halves with batter and shallow fry or deep fry the egg halves till they are golden and crispy on the outside. Ensure the batter is runny and coating in think so it cooks easily and gets crispy faster. 
  • In another saucepan, sauté garlic, onion, and capsicum on high heat, and add a little salt, stirring until they are slightly brown.
  • Then add the sauces and the slurry, and stir until the sauce thickens to your liking. If it's your starter, add less water, so the sauce is thicker, and if you want it with rice, make the sauce runny
  • Once it gets one boil, toss eggs in the sauce, and garnish.

Buttery Herb Scrambled Eggs

This is the perfect egg breakfast recipe for a creamy and luxurious indulgence, which would make you melt and uplift your mood instantly. 

Ingredients: 

  • 4 eggs
  • 2 tbsp butter
  • 1 tbsp milk
  • Salt, pepper
  • Mixed herbs (parsley, oregano)

Method:

  • Break your egg in a bowl and whisk eggs and milk together, and let it mix completely until it leaves little bubbles, then add seasoning to taste.
  • In a pan, melt butter on low heat. You can take the small plate-sized pans to have shaped results 
  • Cook slowly and keep stirring gently, grate salt and pepper and add herbs at the end.
  • In this scrambled egg recipes the important part is maintaining low heat so you maintain the smooth and mushy texture.

Boiled Egg Sabzi

This indian egg recipe is perfect with roti or rice, and bored with the typical bhurji, this boiled egg sabzi recipe is a fresh twist.

Ingredients:

  • 4 boiled eggs
  • Puree: (2 tomatoes, 2 onions)
  • 1 onion chopped
  • 1 tsp ginger-garlic paste
  • Masala: turmeric, chilli powder, garam masala

Method:

  • Boil your eggs and keep them aside in a skillet or pan, and sauté the chopped onion, then add onion paste and spices, and cook it until the aroma emits.
  • Add tomato puree, cook till thick. For puree, I make a separate pure cook 2 tomatoes, 2 onions, coriander leaves, and mint leaves and grind them in fine paste.
  • Once the paste settles, add eggs; you can chop them into 4 or slit them in 2. Simmer for 5 mins, put the lid on, and close it to rest and let the gravy settle with eggs.

Egg Shakshuka

This was a random thing, and I tried when I was bored to stir while making scrambled egg left it as it is and lid it to cook, to later realise this is a legit egg recipe, the shakshuka. This can be served with toasted bread

Ingredients:

  • 4 eggs
  • 1 onion
  • 2 tomatoes
  • 1 capsicum
  • 1 tsp paprika
  • Olive oil

Method: 

  • Start by cooking the onion and capsicum and sauté until golden brown.
  • Then add tomatoes and spices. I mostly use the typical Indian garam masala along with a garlic and mint paste to enhance the flavour 
  • Make wells once the masala is cooked and crack eggs in them.
  • Cover with a lid and cook till set. I like to add cilantro or coriander leaves on top for garnish.

Classic Egg Curry

The classic comfort food level of the Indian egg curry recipe, perfect for lunch and dinner, served with rice or chapati. This is made in a different style in different regions. I will share the classic restaurant style Egg gravy and the Maharashtrian-style we make at home.

Ingredients: 

  • 4 boiled eggs
  • Onion-tomato gravy
  • Ginger-garlic paste
  • Turmeric, coriander powder, garam masala
  • Optional: coconut, coriander, blackpepper, fennel seeds 1tsp and mint leaves paste

Method: 

  • For tadka, fry onions till brown. Once done, add the onion, garlic paste
  • After the paste leaves aroma, add the spices and the onion-tomato gravy, and saute until it leaves oil.
  • Add water according to your preference for gravy. Once boiled, add in eggs 
  • What we do in the Maharashtrian style is create a coconut paste. For that, you can either make a raw paste of all the ingredients or stir-fry onion and garlic until brown, then add grated fresh coconut, roast until brown, then add fennel seeds, coriander and mint leaves and grind a fine paste of this 
  • If you are using this paste, no need for the separate paste. This one is fine, just add curry leaves to the tadka along with onion, put the gravy base, bring it to a boil by adjusting salt and water, then add eggs and simmer.
  • But if you are using raw coconut paste, fry it in oil and onion tadka until it leaves oil, and then adjust salt and water. Once it boils, add the boiled eggs
  • To have a different taste, you can crack raw eggs. After the gravy boils, turn down the stove, break open the eggs and let them simmer until the egg cooks

Masala Omelette

The classic egg breakfast recipe, which can be tweaked to your preference  with different fillings, these are best with breads

Ingredients:

  • 2 eggs
  • Onion, tomato, green chilli (raw/cooked)
  • Coriander
  • Salt, pepper
  • Add-ons: mushroom, cheese, capsicum, zucchini (cooked)

Method:

  • In a bowl, beat the eggs with veggies. You can use the basic or add additional; it can be used raw or cooked.
  • In a pan, add oil as per your preference and cook on medium heat.
  • If you want to make this only the egg white omelette recipe, just remove the egg yolk separately and follow the same recipe
  • Fold and serve hot garnish with cheese grate or cilantro or coriander leaves.

Cheesy Egg Toast Cups

This egg recipe is best for breakfast and a fun, cute, and kid-friendly egg bake recipe. Perfect for breakfast or snack boxes, and even use it for dinner party starters.

Ingredients:

  • 4 bread slices
  • 4 eggs
  • 2 tbsp butter
  • ¼ cup grated cheese
  • Veggies: chopped capsicum, onion, mushrooms, tomatoes
  • Salt, pepper, mixed herbs

Method:

  • Take a bread you prefer, white or brown, flatten the bread, and press it into a muffin tray.
  • Once you set the breads crack an egg into each.
  • Add veggies of your choice, then a generous amount of cheese, and seasoning.
  • Bake 12–15 mins at 180°C, and your party starter egg recipe is ready. 

Egg Frankie (Street-Style Wrap)

The classic street style, the messy, spicy, and delicious egg recipe. You can upgrade it from a street-style franky to mexican burrito, Shawarma, and enchiladas

Ingredients:

  • 2 parathas or wraps (Pita, tortilla)
  • 2 eggs
  • Onion slices
  • Chaat masala
  • Mint chutney & ketchup

Method:

  • Cook an egg on a tawa like an omelette or scrambled, depending on which style you want to make it.
  • Place a wrap over it, flip to stick, add onion, sauces, and masala for the street-style franky, and roll tight.
  • To make a Mexican burrito, add avocado, black beans, sweet corn, salsa, jalapeños, capsicum, onions, cheddar, avocado, and cilantro. 
  • For shawarma-style, use garlic yoghurt sauce, paprika, cumin, shredded chicken, pickled veggies, lettuce, and tahini. 
  • For enchilada-style, mix eggs recipe with enchilada sauce, red beans, olives, onions, tomatoes, and Mexican cheese blend. Extra flavour boosters include lime juice, chilli flakes, oregano, and fresh herbs for a bold, street-style taste.

Egg Potato Hash

This egg breakfast recipe is the crispy and creamy combo, a brunch-style comfort food that I can have any time of the day.

Ingredients:

  • 2 boiled potatoes (grated/cubed)
  • 2 eggs
  • 1 onion
  • Paprika, pepper
  • Butter or oil
  • Cheese (optional)

Method:

  • Start by heating a pan with olive oil and sauté potatoes till crispy.
  • Add onions and spices, and saute until they are golden brown.
  • Make gaps just like you do for the shakshuka recipe and crack eggs in it.
  • Cover and cook as per your preference.

Egg Drop Soup

This is the asian style egg drop soup recipe. Light, soothing, and quick, a little tricky but simple to make if you follow the recipe.

Ingredients:

  • 2 eggs (beaten)
  • 2 cups veg/chicken broth
  • 1 tsp cornflour slurry
  • Pepper, salt
  • Spring onions

Method:

  • Boil the broth you have taken with seasoning.
  • Once it is steaming, add the slurry to give it a thick base.
  • Once it boil lower the heat and slowly pour eggs while stirring. And garnish with spring onion cuts.

Classic French Toast (Bonus Sweet Treat)

And for the bonus, the classic egg French toast Recipe. If you are in the mood to elevate your Sunday breakfast and have an indulgent classic egg recipe, this is your answer.

Ingredients:

  • 4 bread slices (thick works best)
  • 2 eggs
  • ½ cup milk
  • 1 tbsp sugar
  • ½ tsp vanilla extract
  • Pinch cinnamon (optional)
  • Butter for cooking
  • Maple syrup/honey/fruits to serve

Method:

  • Start by whisking eggs, milk, sugar, vanilla, and cinnamon in a bowl. 
  • Then heat a pan on medium and add butter. 
  • Dip each bread slice into the mixture, coating both sides (don’t soak too long, but ensure the coating is generous). 
  • Place the coated bread on the pan and cook 2–3 minutes per side until golden brown and slightly crisp outside, soft inside. 
  • Serve warm with syrup, fruits, or powdered sugar.


See? Eggs don’t have to be boring; they can travel from India to the Middle East to Indo-Chinese streets, all from one pan. You just need a little patience, some eggs, additional ingredients and music in the background to set the mood, and you are set to make any one of these egg recipes for your lunch, breakfast or dinner.
