This recipe is a healthy mix of Tuscan chicken and added greens, balancing both the flavours and being healthy at the same time. One of my favourite indulgences, but I usually make the vegetarian version for myself.
Ingredients (Serves 2–3):

- 250 g penne/fettuccine/protein pasta
- 2 boneless chicken breasts (cubed) (use tofu or cottage cheese for veg version)
- Salt & black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tbsp olive oil + 1 tbsp butter
- 4 garlic cloves (minced)
- ½ cup sun-dried tomatoes (sliced)
- 1 cup mushrooms (optional, but a gourmet touch)
- 1 cup fresh spinach
- 1 cup fresh cream (or hung curd)
- ½ cup milk
- ¾ cup grated parmesan
- Chilli flakes (optional)
- Parsley (for garnish)
Method:
- First, start with searing the chicken. In case you are making veg, get your tofu or paneer out. Season your protein with salt, pepper, paprika, and Italian seasoning.
- Take a pan, heat oil and butter, and sear chicken or tofu for 5–6 minutes until golden, then remove it from the pan.
- While your protein is being prepared, if you want a vegan version of cream, start blending silken tofu, 2 cubes, with soaked almonds in fine paste so it looks like cream.
- If you are using milk and cream while your protein is being prepared, keep your pasta on a boil in salted water until al dente. Reserve ½ cup of pasta water.
- Once your chicken or tofu is done to build flavor use the same pan, add some olive oil or butter to sauté garlic, sun-dried tomatoes, mushrooms (2–3 mins).
- Once they are roasted, lightly add cream and milk. Simmer for 3–4 mins. Stir in parmesan until silky.
- Once the cream base is done, add greens & chicken. Then add spinach; it will wilt in seconds. Let everything combine.
- Finally, add the pasta and splash pasta water, let it simmer for 4-5 minutes so it all blends in the flavour.
- I like to add a crispy touch to it, so what I do is stir-fry spinach with crushed pine nuts or peanuts with a little salt and pepper and use it as a side dish as well.

- And if you want to make the dish look more gourmet, save your grilled chicken or tofu aside and plate it at the end, when you have served the pasta, and top it with seasoning, parsley and some cheese on top and bake it for 2 minutes and melt the cheese.
