Hearty and warm meals are a must for winter, but when you are waltzing through a week on a tight schedule, you need quick but effective solutions. Now the key here is it should be quick and something fulfilling, supporting your gut for the chilly night. When I am tired from a whole day of work, all I want is comforting food, and winter's hearty bowls are something I like. 

So today I will share with you my to-go, delicious one-pot winter meals with less effort, quick and easy to make.

One-Pot Creamy Chicken & Mushroom Orzo:

This is a recipe that I reach for on days when I want something easy, warm, and soul-satisfying. And this Silky, savory, and impossibly easy winter meal recipe brings restaurant-worthy comfort straight to your table.

• Ingredients:

​• 2 tbsp olive oil

​• 1 medium onion, chopped

​• 3 garlic cloves, minced

​• 250 g mushrooms, sliced (of your choice, Shiitake/Oyster/Button Mushroom)

​• 2 chicken breasts, cubed

​• 1 cup orzo (can opt for spaghetti/penne)

​• 3 cups chicken broth

​• ½ cup cream or milk

​• ½ tsp thyme

​• Salt & pepper

​• Grated parmesan (optional)

​• Spinach or parsley to finish

• Method: 

​• Start with heating oil in a pot, and sauté onions and garlic until fragrant, don't overdo it, make them translucent. 

​• Then add mushrooms and cook until browned. Note that each mushroom has a different way of cooking, so read the method of the one you are opting for and ensure to cook it thoroughly 

​• Once mushroom is done, add chicken cubes, salt, pepper, and thyme; cook until lightly golden. For variations, swap chicken for tofu or shrimp.

​• Stir in orzo once the chicken is properly roasted, coating it in the juices.

​• After all the ingredients are in, pour in broth, cover, and simmer 12–15 mins until orzo absorbs liquid.

​• Stir in cream, spinach, and parmesan. Spinach, you can have stir-fried or raw, and then let it cook along 

​• Simmer for 2 more minutes, and at the end, add lemon zest if you like brightness, and serve warm and creamy.

Ans) Yes, chicken orzo can be nutritious when prepared well. Though there are some fancy and simple bowls I like in winter, being born in an Indian family, Lentil and vegetable stew hits a different level of comfort, it feels homely hug. So today I would like to share one of my personal favorites, healthy winter recipes. 

​• Ingredients:

​• 2 tbsp olive oil

​• 1 onion, diced

​• 2 garlic cloves, minced 

​• 2 carrots, chopped

​• 2 potatoes, cubed

​• 1 cup red or brown lentils (Toor Dal, Masoor Dal, Moong Dal)

​• 1 cup tomatoes (fresh or canned)

​• 4 cups vegetable broth

​• 1 tsp smoked paprika

​• ½ tsp cumin

​• Salt & pepper

​• Fresh coriander or parsley

​• Method: 

​• Heat oil in a pot and sauté garlic and onions until soft. After the onion softens, add some chopped tomatoes and stir until soft and release oil.

​• Once done, add carrots, potatoes, paprika, and cumin; cook 3 mins, you can add in any leftover winter veggies, turnip, leeks, pumpkin, and kale.

​• Then add lentils (Use red lentils for quicker cooking; brown lentils for a heartier bite) and tomatoes, stirring to combine. Once combined, pour in broth, bring to a boil, then simmer 25–30 mins.

​• When vegetables and lentils soften, adjust the seasoning and salt. Add a splash of coconut milk for richness

​• Garnish with fresh herbs and serve with crusty bread, rice, or any kind of Indian breads

Ans) Brown, green, and red lentils are the most common choices for stews. Brown lentils hold their shape well and add a mild, earthy taste. Green lentils, especially French green lentils, stay firm and offer a slightly peppery flavor. Red lentils cook fastest and naturally thicken the stew, giving it a creamy texture. Many recipes mix two varieties for depth, body, and balanced flavor.

2. How much to cook the lentils for them to give perfect consistency?

Ans) Lentils usually need 20–30 minutes of simmering for the perfect stew-like consistency. Brown and green lentils stay firm when cooked for around 25–30 minutes, while red lentils soften in just 15–20 minutes. For a thicker texture, cook them longer or partially mash. Always rinse lentils before cooking and adjust water gradually to prevent the stew from becoming too soupy
