Spiced & Golden: Indian Pumpkin Halwa for a Cozy Thanksgiving

This is one of the traditional desserts, a comforting, aromatic dessert that celebrates pumpkin with flavours and richness of saffron, a perfect fusion of fall flavor and Indian festival flair.

1) Ingredients:

  • 2 cups grated pumpkin

  • 3 tbsp ghee (clarified butter)

  • ½ cup milk

  • ¼ cup sugar

  • Start by grating the pumpkin with how finely as you want the final consistency. Grate that finely (a shortcut if you don't want to go through the grating process, just pressure cook the pumpkin for 1 whistle to make it mashable, but it should not contain water, or the taste would go bland)

  • Now, sauté the grated pumpkin in ghee until soft. 

  • Add milk and cook until absorbed. You can also add some solid milk to give a cakey and crumbly texture.

  • Once milk is absorbed, mix in sugar, cardamom, and saffron. Stir until glossy. 

  • Garnish with almonds or pistachios, to give them a rich texture and flavour, you can sauté them in clarified butter along with raisins and serve warm for ultimate comfort.
